Rock Shrimp Hush Puppies

(served at B&B)

Ingredients:

Dry:

2 C Corn Meal
2 1/2 C All Purpose FLOUR
4 T Salt
2 T Baking Powder
1 T Cayenne
1 T Chopped Thyme

Wet:

5 LB Fresh Florida Rock Shrimp
2 C Milk
4 Eggs
1/4 LB Butter, Melted
5 Cloves Garlic, Microplaned
1 QT Corn
1 PT Jalapeno

Preparation:

Whisk dry ingredients together. Create a well in the dry ingredients, add wet ingredients and fold together. Form balls the size of golf balls. Deep fry in oil at 350 degrees until golden brown.

Scallion-Garlic Aioli

5 Bunches Scallions, Charred
6 Cloves Garlic
1 Cup Lemon Juice
1 T Dijon Mustard
3 T White Wine Vinegar
1 1/2 C Water
1 1/2 Q Canola Oil
Salt & Evo to Finish/Taste
