(served at B&B)
3 lbs ground beef
1/2 loave country bread(crusts removed and cubed)
1/2 bunches parsley chopped
1 cup grated pecorino
1/2 tsp chili flakes
Salt and pepper to taste
4 cups tomato sauce
Soak country bread in water for 5 minutes. Remove and squeeze out all the water.
Mix beef, bread, parsley, eggs, pecorino, chili flakes and season with salt and pepper. Test seasoning by frying a small piece.
Roll out meat into balls about 2oz each.
Line two large sheet pans with parchment paper and place meatballs on with about 1/8 of an inch in between.
Bake in a 500 degree oven for about 25 minutes or until nicely browned.
When cool put meatballs in a six inch deep hotel pan and cover with tomato sauce. Cover with aluminum foil.
Bake in a 400 degree oven for 1 ½ hours.
