Grilled Whole Daurade

(served at Lure NY)


1 daurade / butterflied
1 tsp chopped mint
1 tsp chopped parsley
1 tsp chopped oregano
2 tbsp evoo
1 shallot minced
1/4 tsp dried lavender
2 sprigs thyme/ picked
zest of 1/4 lemon
1 tbsp white balsamic vinegar
1/4 tsp sugar
2 spring onions/ cut in half
3 baby carrots / blanched
salt & pepper to taste


Mix parsley, mint, oregano, lavender and 1 tbsp of evoo and spread on the inside of the Daurade. Season the fish with salt and pepper. Grill 3 minutes on both sides than transfer to a 375 degree oven for about 4 minutes.

Saute baby carrots and spring onions with a little evoo, salt & pepper until carmelized.

To make the sauce mix 1 tbsp evoo, balsamic, thyme, lemon zest, sugar, and shallot. Season with salt and pepper.

Place fish on a plate first. Garnish with carrots and spring onions than top with sauce.
