Cranberry Sauce


12#- Cranberries, fresh
2C- Sugar
1Gal- OJ, fresh
2Btl- Combier, or other orange liquor
10ea- Oranges, segmented and chopped
1C- Sage, chopped
Salt to taste


Combine cranberries, sugar, OJ and combier. Bring to a simmer and cook until ½ of the cranberries pop. Remove sauce from the pot and sir in the orange segments and sage. Cool to room temperature and season with salt.
