Butter Lettuce & Endive Salad


1.5C- Cider vinegar
1/2C- Dijon mustard
1/2C- Whole grain mustard
1C- Garlic confit
3T- Honey
1T- Kosher salt
5C- Canola oil
Procedure: Combine all ingredients except oil in the robot coupe. Blend for 20 seconds the emulsify in the canola oil until completely combined.


Toss Butter lettuce and red endive spears with the dressing and salt
Slice bartlet pears on a mandolin and place over the top
Crumble blue cheese over the top
Finish with walnuts, toasted and chopped
