Capon’s Grilled Shrimp Salad


Grilled shrimp
Roasted corn off the grill
Chopped romaine
Cherry tomatoes
Diced jicama
Black beans
Charred red onion
Charred poblanos grilled, seeded and diced
Diced avocado
1 cup roasted jalepeno vinaigrette
Crushed tortilla chips for garnish
Queso Fresco (optional)


1. Toss shrimp in the dressing and marinate for a few minutes. Put them on skewers, season with S&P
2. Grill the corn, poblano peppers and red onion until lightly charred
3. Once the poblano peppers are done, put them in a bowl and cover with saran wrap to let them steam. Peel, seed & chop the poblanos. Chop red onions, cut corn off the cob
4. Grill the shrimp & build the salad. Be sure to toss with the vinaigrette
