SHRIMP & SAUSAGE IN GREEN SAUCE

Ingredients

1 red onion diced
1 yellow pepper diced
3-4 cloves of garlic shaved
1 jar @sietefoods green enchilada sauce
1 lb ground chorizo or spicy Italian sausage
1 lb shrimp cleaned & tails removed (21-25, medium sized)
2 limes
1 bunch fresh cilantro
EVOO
Shaved radish for garnish
Avocado for garnish
Blue corn tortilla chips for garnish

Instructions

1. Heat a large stock pot, add the EVOO and brown the crumbled chorizo for about 5 minutes, stirring often
2. Add garlic and onions, continue to cook for 3-5 minutes
3. Add yellow pepper, continue to cook for 2-3 minutes, stirring and scraping from the bottom of the pan often
4. Season shrimp with salt & pepper, add shrimp to pot. Cook for 3-5 minutes until shrimp are cooked through
5. Add Siete enchilada sauce, bring to a simmer
6. Finish with the juice of 2 limes and 2 TBSP of chopped cilantro
7. Serve in a bowl and garnish with diced avocado, shaved radish, crushed blue corn of tortilla chips, a sprig of cilantro and garnish with a lime wedge
