* 1 dozen large east coast oysters
* 2 cups creamed spinach (see baked spinach recipe)
* 1 pound crab
* 1 cup Parmesan cheese
* 1 cup chopped marinated artichokes
* 1 cup panko
* Salt and pepper
* Olive oil
* Zest and juice of 1 lemon
* 1 pinch of cayenne pepper
* ½ cup parsley
1. Add 1 pound of crab, 1 cup chopped marinated artichokes, 2 cups creamed spinach, 1 cup panko bread crumbs, 1 cup parmesan cheese, the zest and juice of 1 lemon in a mixing bowl
2. Mix well and add a pinch of cayenne pepper and salt to season
3. Shuck the oysters and make sure they are clean
4. Make salt piles on a baking sheet to stabilize the oysters
5. Place the oysters on the mounds of salt on the baking sheet
6. Top each oyster with a tablespoon of the crab and artichoke mixture and sprinkle a little Parmesan cheese on top
7. Place the stuffed oysters under a broiler until golden brown
9. Place on a bed of parsley and garnish with half lemon
Serve immediately and enjoy!!
