1 pound diced sushi grade tuna
1 tablespoon minced ginger
1 minced shallots
2 cloves minced garlic
1 tablespoon minced finger chili
1 tablespoon chopped cilantro
1 teaspoon sesame oil
1 tablespoon sesame seeds
1 tablespoon chopped scallions
¼ cup soy Juice and zest of
1 lime 1 cup diced cucumber
1 crushed avocado Rice crackers/ shrimp chips for garnish


1. In a mixing bowl combine the soy, sesame oil, lime juice and zest, minced finger chili, minced garlic, minced ginger, chopped cilantro, chopped scallions, minced shallots
2. In another bowl crush the avocado and season with lime juice and salt, set aside
3. Dice tuna
4. Mix tuna with 1 cup diced cucumber, a pinch of salt
5. Add enough of the soy vinaigrette to season but not overpower
6. Using a ring mold put a layer of the avocado on the bottom followed by a layer of the tuna tartare
7. Garnish with the scallion bias
8. Toss with red finger chili, sesame seeds, and lime juice
9. Serve with rice crackers or chips of your choice
